Most meal prep fails on day three, and it usually fails for the same reason: everything was dressed on Sunday. Sauce sitting on grains for four days turns lunch into paste.
This box fixes that with a lemon-tahini sauce stored in its own small container, plus quinoa cooked slightly firm so it can absorb moisture over the week instead of collapsing.
One sheet pan, one pot, thirty-five minutes, and four lunches at 36 grams of protein each. It is the single most-repeated recipe in our own kitchen.

Heat and season
Heat the oven to 425°F. Toss the sweet potatoes and onion with 1 tablespoon oil and half the salt on a sheet pan. Rub the chicken with the remaining oil, paprika, garlic powder, and salt.

Roast in two stages
Roast the vegetables alone for 8 minutes, then add the chicken to the pan and roast 15 minutes more, until the chicken reaches 170°F and the potato edges are caramelized.

Cook the quinoa firm
Simmer the quinoa in the broth, covered, for 12 minutes — one minute under the package time. Kill the heat and let it steam 5 minutes, then fluff.

Whisk the sauce
Whisk the tahini, lemon juice, and warm water until pourable. It will seize before it loosens; keep whisking.

Pack the boxes
Divide the quinoa, chicken, and vegetables between four containers. Portion the sauce into four small lidded pots and store it separately.

Cool before you lid
Sealing warm food traps steam, and steam is what makes day-three lunch soggy. Leave the boxes uncovered for fifteen minutes first.
Undercook the quinoa by a minute
It keeps absorbing moisture in the fridge. Firm on Sunday means correct on Thursday.
Slice the chicken cold
Roast whole, chill, then slice. Whole thighs hold far more moisture through the week than pre-cut pieces.

Storage & reheating
Four days refrigerated, sauce stored separately. Reheat the box covered for 2 minutes in the microwave, then add the sauce after heating — tahini splits when it's cooked twice. Chicken and quinoa freeze well for two months; leave the sweet potato out of the freezer batch, as it goes grainy.

How many days will these actually last?
Four, comfortably. Cook on Sunday and Thursday's box is still good. If you need five, freeze the last one on Sunday and move it to the fridge on Wednesday night.
Can I use rice instead of quinoa?
Yes — long-grain brown rice holds up best. Skip short-grain white rice, which turns dense and chalky after two days in the fridge.
Is the tahini sauce necessary?
Something is. Dry prep is abandoned prep. Greek yogurt thinned with lemon and salt works just as well and adds another 6 grams of protein per box.
Can I double the batch?
Use two sheet pans on separate racks and rotate them halfway. Crowding one pan steams the chicken instead of roasting it.
