Shawarma spice does most of the work here — cumin, coriander, paprika, turmeric, and a hit of cinnamon that people never quite place but always ask about.
Roasted chickpeas are the protein, and the only rule is that they must be bone dry before they meet oil. Wet chickpeas will not crisp, no matter how long you leave them in.
Four bowls in thirty minutes, entirely vegetarian, and cheap enough that the whole batch costs less than one delivery order.

Dry the chickpeas hard
Roll the drained chickpeas in a clean towel until the skins look dull and papery. This step decides whether they crisp.

Spice and roast
Toss with the oil, cumin, paprika, coriander, turmeric, cinnamon, and salt. Roast at 425°F for 20 minutes, shaking the pan once at the halfway mark.

Steam the couscous
Pour boiling broth over the couscous, cover tightly, and leave 5 minutes. Fluff with a fork — never a spoon, which compacts it.

Mix the garlic yogurt
Stir the yogurt, grated garlic, lemon juice, and a pinch of salt until smooth and pourable.

Assemble the bowls
Layer couscous, chickpeas, cucumber, and tomatoes into four containers, with the yogurt sauce packed separately.

Bloom the spices in the oil
Mix the spices into the oil before tossing, not onto dry chickpeas. Fat carries the flavor onto every surface evenly.
One layer, no crowding
Two cans need a full sheet pan. Piled chickpeas steam each other and come out leathery.
Salt the cucumber separately
Salted cucumber weeps water into the box. Keep it plain and season at the table.

Storage & reheating
Four days refrigerated with the sauce packed separately. Chickpeas soften in the box — that's normal — and re-crisp in a dry skillet or air fryer for three minutes if it bothers you. Couscous reheats best with a teaspoon of water stirred in first. The roasted chickpeas freeze for two months; the assembled bowls do not.

Can I make this vegan?
Yes — swap the Greek yogurt for a thick coconut or soy yogurt, or use tahini thinned with lemon and water. Protein lands around 16 grams.
What can replace couscous?
Quinoa adds 4 grams of protein per bowl, and bulgur or rice both work. For lower carb, use a bed of shredded romaine instead.
Can I add meat to this?
