This is the dinner we make when there are twenty-five minutes on the clock and no patience left in the building. One skillet, a four-ingredient glaze, and 42 grams of protein per bowl — enough that nobody is back in the pantry at 9pm.

The whole recipe hinges on heat management: hard sear first, glaze last. Do it in that order and the sauce lacquers the chicken instead of scorching into the pan. Do it backwards and you spend the evening scrubbing.

It scales cleanly to eight servings and reheats better than almost anything else on this site, which is why it has been our most-cooked recipe three months running.

If a weeknight recipe needs more than one pan, it needs a better idea.

    Mix the glaze

    Whisk the soy sauce, chili garlic sauce, honey, and grated garlic in a small bowl until the honey fully dissolves. Set it next to the stove — once the chicken is searing you will not have time to measure.

    Sear the chicken

    Heat the oil in a large skillet over high heat until it shimmers. Add the chicken in a single layer and sear undisturbed for 4 minutes, then toss and cook 3 minutes more until the edges are deep brown.

    Char the broccoli

    Push the chicken to one side, add the broccoli with 2 tablespoons of water, cover, and steam-char for 3 minutes until bright green with brown blistered spots.

    Glaze and finish

    Pull the pan off the heat for ten seconds, pour in the glaze, then return to medium and toss for 2 minutes until it thickens and coats every piece.

    Build the bowls

    Spoon over jasmine rice, then finish with sesame seeds and scallions. Serve immediately while the glaze is still glossy.

Dry the chicken first

Pat every piece dry with paper towel. Wet surfaces steam instead of searing, and you lose the crust that makes this dish work.

Glaze off the heat

Honey burns fast. Pull the pan off the burner for ten seconds before the glaze goes in, then return it to the flame.

Salt the broccoli early

A pinch as it hits the pan draws out water quickly, so you get char in three minutes instead of six.

Storage & reheating

Keeps in the fridge for four days in an airtight container — store the broccoli separately so it doesn't go soft. Reheat in a skillet over medium-high for three minutes with a splash of water to loosen the glaze, or microwave covered for 90 seconds and stir halfway. It freezes for two months without the rice; thaw overnight before reheating.

Can I use chicken breast instead of thighs?

Yes. Cut it slightly smaller and reduce the sear to 3 minutes on the first side so it stays juicy — breast dries out roughly two minutes faster than thigh.

How spicy is this?

Medium. Two tablespoons of chili garlic sauce gives a warm hum, not a burn. Start with one tablespoon and add more at the end if you're cooking for kids.

Is this good for meal prep?

It's one of our best. Store the rice and chicken together, but keep the broccoli in its own compartment so it doesn't steam soft.

What can I swap for the honey?

Maple syrup or brown sugar work one-for-one. Skip it entirely and the glaze stays savory but won't get that lacquered finish.
