Harissa and honey are the shortest route we know from a plain fillet to something worth photographing. The paste brings smoke and chili, the honey rounds it off, and the oven does the rest in fifteen minutes.
The chickpeas are the real trick. They go in first, get a head start on crisping, and by the time the salmon is done they're crunchy enough to work like croutons.
Salmon is finished at 125°F for a silky center — pull it there and it will carry to about 130°F while it rests.

Heat the oven
Heat the oven to 425°F with the rack in the upper third. A hot upper rack is what crisps the chickpeas instead of drying them out.

Start the chickpeas
Toss the dried chickpeas with 1 tablespoon olive oil, the cumin, and half the salt. Spread on a sheet pan and roast for 10 minutes.

Mix the glaze
Stir the harissa, honey, lemon juice, remaining olive oil, and remaining salt together into a loose paste.

Add the salmon
Push the chickpeas to the edges, set the fillets skin-down in the center, and spoon the glaze over the tops.

Roast and rest
Roast 10 to 12 minutes, until the thickest part reads 125°F. Rest 3 minutes, then serve with yogurt, parsley, and lemon wedges.
Chef's tips
Dry chickpeas, crisp chickpeas
Roll them in a towel until they squeak. Any surface moisture turns the roast into a steam bath.
Glaze goes on late
Honey under a 425°F broil-adjacent rack scorches in minutes. Adding it with the salmon, not before, keeps it glossy.
Buy center-cut fillets
Even thickness means every piece finishes at the same time — tail pieces overcook while the thick end is still raw.

Storage & reheating
Refrigerate up to three days in an airtight container. Salmon reheats badly in the microwave; warm it in a 275°F oven for eight minutes, or eat it cold flaked over greens, which is genuinely better. Re-crisp leftover chickpeas in a dry skillet for two minutes. This one does not freeze well.

How spicy is harissa?
It varies a lot by brand — rose harissa is mild and floral, Tunisian-style is considerably hotter. Taste yours first and cut it with an extra teaspoon of honey if it's fierce.
Can I use frozen salmon?
Yes, but thaw it fully in the fridge overnight and pat it dry. Cooking from frozen adds about 6 minutes and gives you a watery glaze.
What else works with this glaze?
Chicken thighs (roast 25 minutes), cauliflower steaks, or firm tofu. The ratio of 2 parts harissa to 1 part honey holds across all of them.
How do I know the salmon is done without a thermometer?
Press the thickest part with a fork — when it flakes but the very center still looks slightly translucent, it's done. It keeps cooking off the heat.
