Shrimp cooks in about two minutes, which makes it either the fastest weeknight protein available or the easiest one to ruin. There is no middle ground and no forgiveness.
The rule: pull them off the heat when they form a loose C. A tight O means they're overdone. Everything else in this recipe is just garlic, butter, and lemon in the right order.

Dry and salt the shrimp
Pat the shrimp completely dry and toss with the salt. Wet shrimp poach in their own liquid instead of browning.

Sear hot and fast
Heat the olive oil in a large skillet over high heat. Add the shrimp in a single layer and cook 60 to 90 seconds per side, until just pink. Move them to a plate — they are not fully done yet.

Build the butter sauce
Lower the heat to medium, add the butter, garlic, and pepper flakes, and cook 60 seconds until the garlic is fragrant but still pale.

Deglaze
Pour in the wine and lemon juice, scraping the browned bits off the bottom, and simmer 2 minutes until slightly syrupy.

Return and serve
Slide the shrimp and any resting juices back in, toss 30 seconds to finish, then spoon over rice with lemon zest and parsley.
Chef's tips
Cook shrimp in two stages
Sear, remove, then return them for the last thirty seconds. It's the only reliable way to get color without rubber.
Slice the garlic, don't mince
Minced garlic burns in a hot butter pan within seconds. Slices hold their shape and stay sweet.
Zest at the end
Lemon zest loses its perfume the moment it hits heat. Add it off the flame, right before serving.

Storage & reheating
Best the day it's made, but keeps two days refrigerated. Reheat only until warm — 45 seconds in the microwave at half power — because a second full cook makes shrimp tough. The garlic butter sauce can be made three days ahead and refrigerated separately. Cooked shrimp does not freeze well; freeze it raw instead.

Frozen or fresh shrimp?
Frozen is usually better unless you live on the coast — most 'fresh' counter shrimp was previously frozen anyway. Thaw in cold water for ten minutes and dry thoroughly.
What size shrimp should I buy?
16/20 or 21/25 count. Smaller shrimp overcook before they brown, and jumbo shrimp need an extra 30 seconds per side.
Can I skip the wine?
Yes. Chicken broth plus an extra teaspoon of lemon juice gives you the same acidity and deglazes just as well.
What can I serve this over besides rice?
Orzo, buttered angel hair, polenta, or roasted zucchini if you want it lighter. The sauce is thin enough that it needs something absorbent underneath.
