Mug cakes have a reputation for being dry, and protein powder usually makes that worse. The fix is two things: Greek yogurt for moisture, and stopping the microwave before you think it's done.
Ninety seconds is the ceiling. At 100 seconds this is a sponge; at 80 it's fudgy in the middle, which is exactly where you want it. Microwaves vary, so calibrate once and then never think about it again.
24 grams of protein, one mug, one fork, no baking sheet.
“Undercook the mug cake by ten seconds. It finishes itself in the mug.”

Ingredients
Serves 1Instructions
- 1
Mix the dry
Whisk the protein powder, flour, cocoa, baking powder, and salt directly in a wide mug so there are no dry pockets.
- 2
Add the wet
Stir in the milk, yogurt, and maple syrup until you have a thick, smooth batter with no lumps at the bottom.
- 3
Drop in the chips
Push the chocolate chips into the center rather than stirring them through — they melt into a molten core.
- 4
Microwave 80 to 90 seconds
Cook at full power for 80 seconds, then check. The top should be set and the center still slightly glossy.
- 5
Rest one minute
Let it sit a full minute before eating. It continues to set and the texture goes from wet to fudgy.
Chef's tips
Use a wide mug
A tall narrow mug cooks the outside long before the middle. Wide and shallow gives you even heat.
Casein beats whey here
Whey tightens and dries under microwave heat. Casein holds moisture, and a 50/50 blend of the two is best of all.
Yogurt is the moisture insurance
Two tablespoons is what stands between fudgy and chalky. Don't swap it for extra milk.

Storage & reheating
Meant to be eaten immediately — mug cake at room temperature for an hour goes rubbery. If you must, cover and refrigerate overnight, then microwave 15 seconds to loosen it. You can pre-mix the dry ingredients in jars for a week's worth of instant cakes; add the wet ingredients only when you're ready to cook. Do not freeze.
Frequently asked
Can I make it without protein powder?
Yes — use 3 extra tablespoons of flour and 2 tablespoons of milk powder. Protein drops to about 12 grams but the texture is excellent.
Why is mine dry?
Overcooking, nearly always. Cut 15 seconds off and check again. Whey-only protein powder is the second most common cause.
Can I bake it in the oven instead?
Yes, in an oven-safe ramekin at 350°F for 12 to 14 minutes. It's more evenly cooked but no longer a five-minute dessert.
Is there a dairy-free version?
Use a plant protein powder, oat milk, and coconut yogurt. Plant protein absorbs more liquid, so add an extra tablespoon of milk.
