What you need
1.5 lb boneless chicken thighs, cut into 1-inch pieces · 3 tbsp low-sodium soy sauce · 2 tbsp chili garlic sauce · 1 tbsp honey · 5 garlic cloves, finely grated · 1 tbsp neutral oil
Step 1
Whisk the soy sauce, chili garlic sauce, honey, and grated garlic in a small bowl until the honey fully dissolves. Set it next to the stove — once the chicken is searing you will not have time to measure.
Step 2
Heat the oil in a large skillet over high heat until it shimmers. Add the chicken in a single layer and sear undisturbed for 4 minutes, then toss and cook 3 minutes more until the edges are deep brown.
Step 3
Push the chicken to one side, add the broccoli with 2 tablespoons of water, cover, and steam-char for 3 minutes until bright green with brown blistered spots.
Step 4
Pull the pan off the heat for ten seconds, pour in the glaze, then return to medium and toss for 2 minutes until it thickens and coats every piece.
Chef's tip
Pat every piece dry with paper towel. Wet surfaces steam instead of searing, and you lose the crust that makes this dish work.
